Essential Fatty Acids (EFAs) are fats that are essential to good health. Found in our cells and cell membranes, they play an important roll in regulating many bodily functions, including cardiovascular function, joint flexibility, fat metabolism, nervous system and brain functions and cell division. Higher consumption of Omega 3 oils in particular have been linked to increased cardiovascular health, improved cholesterol levels, increased joint flexibility, enhanced memory functions and higher energy levels. The body is generally thought to need a 4: 1 ratio of Omega 6 to Omega 3 oils (Schlomo & Carasso, 1993). The problem is that many Americans consume amounts of Omega 6 from processed foods and poor quality oils many times greater than recommended (often as high as 20: 1). By consuming a diet higher in Omega 3 oils, a more optimum ratio can be achieved.
